Why grow olive trees? Three reasons (and maybe more). This is the right climate - mild winters and dry summers. They add to the biodiversity of the farm by providing habitat for many animals, birds, and insects. The olive oil is fantastic.

There are about 200 olive trees on the property. All are Italian Varietals from McEvoy Ranch. Frantoio, Leccino, Maurino, Coratina and Pendolino. Harvest is in December, when 50% of the olives are black, 50% green. The result is a fantastically peppery, grassy, complex oil. Most people have never had Tuscan style olive oil. It's too good for cooking.
